A superb indie Strathmill here, distilled in October 2006 and matured in a single cask! While it spent most of its ageing in refill butt casks, its final eight months were spent in a single sherry butt. The folks at Signatory clearly aren't superstitious, because they bottled it up at 13 years old for the Cask Strength Collection, with an outturn of 706 bottles at 61.2% ABV.
A heady aroma of Madjool dates, prunes and Christmas fruit-mix carry this rich, dark and heavily-sherried new release from Signatory Vintage. Distilled at the Strathmill distillery in 2006, it was matured in refill sherry butts before a final 8 months in a fresh sherry cask. The taste is like a dried fruit bomb, with muscovado sugar, bitter-sweet treacle and a weighty kick of hot spice which is mellowed with the addition of water. Enjoy with a Christmas fruit treat or dark chocolate for an indulgent end of year dram.
